Why You'll Love This Recipe
If you're looking to add another low-carb vegetable to your favorite side dish list, give keto brussels sprouts with bacon a try!
Roasting them in the oven with bacon brings out their flavor and creates that beautiful caramelized flavor and color.
A cast iron skillet works great for this recipe because it distributes heat evenly, but you could always use a sheet pan when it comes time to place them in the oven.
Best Vegetables for Roasting
Roasted root vegetables are delicious, however, almost any vegetable can be roasted in the oven.
- Broccoli, cauliflower, zucchini, yellow squash, spaghetti squash
- Bell peppers, onions, asparagus

(2) In a large bowl, toss halved Brussels sprouts with olive oil, salt, and freshly ground black pepper.
(3) Heat skillet over medium-high heat and add Brussels sprouts. Cook for several minutes until they begin to turn brown. Add the crumbled bacon to the skillet and place in the oven. Roast for 20-25 minutes, stirring halfway through, until the sprouts turn a rich, caramelized color.

Frequently Asked Questions
What main dish goes with brussels sprouts?
You can serve these keto brussels sprouts with any protein! They go great with steak, chicken, and seafood. Try them with my reverse seared steak or keto cod with garlic butter recipe!
Should you wash brussels sprouts before cooking?
Yes, rinse them well first, then pat dry. Trim the ends off and remove any leaves that have brown spots. Slice them in half before roasting them.
Storing in the Fridge
Keep fresh, unwashed brussels sprouts refrigerated for 3-5 days after purchase for best results. Once cooked, they will stay fresh for up to 3 days. Store cooked brussels sprouts in airtight containers. I like to use BPA-free glass containers with locking lids. Check out this 18-piece set of glass food storage containers with locking lids.
Reheating
The best way to reheat keto brussels sprouts is in the oven. This way, they will regain some of their crispiness. Place them in a 400F oven for about 5-10 minutes or until hot and crispy. Alternatively, you can warm them in the microwave, in a covered dish, for just a couple of minutes. Overheating can cause mushy Brussels sprouts, and we don't want that!

Ingredients
- 1-½ pounds fresh Brussels sprouts, washed, trimmed, and cut in half
- 4 slices of thick-cut bacon
- 2 tablespoons extra virgin olive oil
- salt and pepper to taste
Instructions
Preheat your oven to 400 F.
In a large cast-iron skillet, cook the bacon over medium-high heat. Flip the bacon over one time to cook evenly on both sides.
Remove the skillet from the heat, and place the cooked bacon on some paper towels to drain the fat off. Blot bacon with paper towels to remove excess fat and then crumble the bacon (leave in large pieces if you like).
Toss the Brussels sprouts and olive oil in a large bowl. Season with salt and black pepper, to taste. Just a little sprinklng of each is all you need.
Return the skillet to the stove and heat to medium-high. Add the Brussels sprouts and cook for several minutes until they begin to brown. Add the bacon pieces to the skillet and put into the pre-heated oven. Roast for 10 minutes, stir, and roast for another 10-15 minutes or until the sprouts turn a rich, dark color.
Remove skillet from oven and enjoy.
