  • Thick-cut bacon slices
  • Fresh brussels sprouts, washed, trimmed, and cut in half
  • Extra virgin olive oil
  • Sea salt and freshly ground black pepper

(1) Cook the bacon in a large cast-iron skillet. Remove bacon from the skillet and blot with paper towels to remove excess fat before crumbling.

(2) In a large bowl, toss halved Brussels sprouts with olive oil, salt, and freshly ground black pepper.

(3) Heat skillet over medium-high heat and add Brussels sprouts. Cook for several minutes until they begin to turn brown. Add the crumbled bacon to the skillet and place in the oven. Roast for 20-25 minutes, stirring halfway through, until the sprouts turn a rich, caramelized color.

(4) Remove skillet from oven, plate the brussels sprouts, and enjoy.

Reheating

The best way to reheat keto brussels sprouts is in the oven. This way, they will regain some of their crispiness. Place them in a 400F oven for about 5-10 minutes or until hot and crispy. Alternatively, you can warm them in the microwave, in a covered dish, for just a couple of minutes. Overheating can cause mushy Brussels sprouts, and we don't want that!

Ingredients

  • 1-½ pounds fresh Brussels sprouts, washed, trimmed, and cut in half
  • 4 slices of thick-cut bacon
  • 2 tablespoons extra virgin olive oil
  • salt and pepper to taste

Instructions

  • Preheat your oven to 400 F.

  • In a large cast-iron skillet, cook the bacon over medium-high heat. Flip the bacon over one time to cook evenly on both sides.

  • Remove the skillet from the heat, and place the cooked bacon on some paper towels to drain the fat off. Blot bacon with paper towels to remove excess fat and then crumble the bacon (leave in large pieces if you like).

  • Toss the Brussels sprouts and olive oil in a large bowl. Season with salt and black pepper, to taste. Just a little sprinklng of each is all you need.

  • Return the skillet to the stove and heat to medium-high. Add the Brussels sprouts and cook for several minutes until they begin to brown. Add the bacon pieces to the skillet and put into the pre-heated oven. Roast for 10 minutes, stir, and roast for another 10-15 minutes or until the sprouts turn a rich, dark color.

  • Remove skillet from oven and enjoy.
