- 4 individual slices of salmon fillets
- 8 oz cream cheese, softened
- 2 cup spinach, rinsed
- 2 tablespoonsolive oil, divided
- 4 oz Mozzarella cheese, shredded
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes, optional
- 1/2 teaspoon Italian seasoning, optional

Directions
1.To prepare the spinach salmon casserole:Position a rack in the center of the oven and preheat the oven to 400ºF (200°C).
2. Add olive oil, garlic, Italian seasoning, and red pepper flakes into a bowl along with 1 teaspoon of salt and ½ teaspoon black pepper. Arrange the salmon fillets in a baking dish and cover with the marinade, set aside for 10-15 minutes on the counter while prepping the other ingredients and the oven finishes preheating.
3. Quickly wilt the spinach in a skillet with 1 tablespoon olive oil and set aside.
4. Spread the softened cream cheese over the salmon fillets and lay spinach on top of the cream cheese. Finally, sprinkle mozzarella over the top.
5. Bake the spinach salmon casserolefor 20-25 minutes, until salmon is cooked through. Sprinkle with red chili pepper flakes and chopped parlsey. Serve thespinachsalmon casserolewarm with a side of cauliflower rice, or roasted veggies. Enjoy!❤️

- If you like your food spicier, combine the spices with the cream cheese before spreading on salmon. Nothing prevents you to add a tablespoon of hot sauce to the mix!
- If you have more time available, let the salmon marinate for longer.

Pretty good! I didn't have any mozzarella so I used some Mexican mix I had. I definitely think it'd be better with moz. No fresh parsley either. I only baked mine for about 15 minutes and pulled 165F+ temps, but my fillets were a little thinner. I think next time I'll put a little more spinach on it too. Thanks for the receipe!
