This recipe for persian walnut cookies (naan-e gerdooi) is THE best! It’s made with walnuts, healthy. Plus, these are gluten-free cookies. Added bonus! And, these Persian cookies are easy to make. Super bonus!

Cookies with Walnuts

Now these Persian walnut cookies are more like a subtly sweet biscuit to me. Perfect with tea or coffee or as a nice bite after a dinner when you want something ‘sweet’ but not too much! Oftentimes when I use another foodie’s recipe, I ‘boho’ it, in other words, I make it my own by tweaking ingredients, etc. This time, however, I followed Lin’s great recipe! Enjoy the adventurous eats with me~it makes life more interesting!

So many folks today are trying to cut back on gluten, but they still want the goodies of cookies and bread. So, going gluten-free has really become more mainstream and ingredients for cooking are much easier to source. These gluten-free persian walnut cookies are actually probably kinda, and I say kinda, healthy since they use mainly ground walnuts and egg yolks. Then you’ve got the irresistible spice, cardamom! OMG! Love love this spice. It’s a great swap from cinnamon, allspice, nutmeg, cloves and the regular spices we think of when making cookies or sweets.

Another thing that appealed to me about these cookies was that they were easy, and Lin had prepared them for the Persian new year celebration. OK, hands down, this recipe using cardamom is THE best you’ll ever taste. With just a few ingredients, you’ll make magic in no time!

Yield: Two dozen

Persian walnut cookies or naan-e gerdooi melt in your mouth with every bite. Gluten-free and easy to make, this cookie recipe will be a family fave!

Ingredients

  • Preheat oven to 300
  • 4 egg yolks
  • 1/2 cup powdered sugar + 2 TBL for dusting, see Notes below for using coconut sugar
  • 1 tsp. ground cardamom
  • 1 tsp. vanilla, or rose water
  • Pinch sea salt
  • 3 cups walnuts, ground finely

Instructions

  1. Put the eggs and sugar (1/2 cup if using powdered) in a large bowl. Using a hand mixer, blend for about 75-90 seconds until all is well incorporated.
  2. Add the cardamom, vanilla and salt blending well.
  3. Add the ground nut and work together into a wet thick gooey batter.
  4. Dollop about a heaping tablespoon (leaving about 2 inches between cookies) on a parchment paper lined cookie sheet. Take a small piece of parchment paper, place on the cookie and give it a quick 'smoosh'.
  5. If using sea salt flakes and/or crushed pistachios sprinkle on top.
  6. Bake in a preheated 300 oven about 18 to 23 minutes.
  7. Remove to a cooling rack for about 15 minutes. Dust with powdered sugar (optional).

Notes

  • Coconut sugar can be substituted for powdered sugar. Use 1/2 cup.
  • You may substitute rose water extract for vanilla extract.
  • Top with sea salt flakes for a pop of flavor.
  • Use crushed pistachios on top for more texture and a nuttier flavor.
  • Edible rose petals also can be put into the batter before baking for more flair!
