Every Christmas season I look forward to buying a container of eggnog. Now I realize this drink is one that you either love or hate.

I'm on team love and like to drink a small glass of it every once in a while during the month of December, but usually I buy it for baking things like these Eggnog Sugar Cookie Barsor this Eggnog Cream Pie.

Our oldest son loves eggnog too, so I have to hide it in the fridge. If I don't hide it, he will drink it all before I get around to baking. I have a bad habit of buying ingredients one day, then not baking my recipe idea until later in the week.

This year was no different. I bought a container of eggnog, but I wasn't ready to bake anything just yet. I started to put it in the fridge by the milk. As soon as I closed the door, I second guessed that decision.

Immediately, I opened the door and moved it to the condiment shelf. Big ketchup bottles are great for hiding small bottles of eggnog, by the way. Now before you give me grief from hiding it, that hiding spot lasted all of one day.

Imagine the grief I got when our son found it, and realized that I was "hiding" it in the door. He knows me too well to know it wasn't an accident that it was put there. So, I had to make up for it by letting him drink all of the eggnog.

The next shopping trip I brought home two cartons, so he could get his daily eggnog fix, and I could bake some eggnog cheesecake crumble bars. #winningatlife

These easy cake bars have three times the eggnog love in them. I used it to make a soft dough out of the cake mix, mixed it into the cheesecake, and then made a glaze to drizzle on top. Eggnog love is happening in cake mix bars for sure!

A slice of these cake mix bars and a glass of eggnog should get you into the holiday spirit for sure.

How to Make Eggnog Crumble Bars

  1. Mix together the dry cake mix, melted butter, eggnog and extract until a soft dough forms.
  2. Press half the dough evenly on the bottom of a foil or parchment lined pan.
  3. Beat the cream cheese and sugar until creamy. Add eggnog, nutmeg, and extract and beat again.
  4. Pour the cheesecake batter on the dough in the pan.
  5. Crumble the other half of dough evenly over the top of the batter. Bake and cool.
  6. Drizzle the chilled bars with an eggnog glaze.

PRO TIP: Lining your pan with foil or parchment makes it easier to get the bars out of the pan later. Plus, it saves you from washing extra dishes. Win, win.

Ingredients

For the Cake

  • 1 vanilla cake mix
  • ⅓ cup unsalted butter, melted
  • ⅓ cup eggnog
  • ½ teaspoon rum extract

For the Cheesecake

  • 1 (8 ounce) package cream cheese, softened
  • ¼ cup granulated sugar
  • ¼ cup eggnog
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon rum extract

For the Glaze

  • ½ cup powdered sugar
  • 1 Tablespoon + 1 teaspoon eggnog
  • nutmeg

Instructions

  1. Preheat oven to 350 degrees F. Line an 8x8 baking pan with foil or parchment paper. Spray with nonstick baking spray.
  2. Mix together the dry cake mix, melted butter, eggnog, and extract until a soft dough forms.
  3. Press half the mixture into the bottom of the prepared pan. Set aside.
  4. Beat the cream cheese and sugar until creamy. Add the eggnog, nutmeg, and extract and beat again. Pour onto the crust in the pan.
  5. Crumble the rest of the dough over the top of the cheesecake batter. Bake for 40 minutes. Do not over bake. Remove and let cool on counter 1 hour. Chill in the refrigerator for 3-4 hours.
  6. Whisk together the powdered sugar and eggnog. Drizzle over the chilled bars.
  7. Sprinkle with nutmeg and let set before cutting into bars. Store in a sealed container in the refrigerator.

    I’m making this right now and I did not end up with a dough, it was more of a wet cake dough, so it did not crumble. I’m sure it will taste great, but it’s not a crumble. Where did I go wrong? Is there a specific vanilla cake mix I should use? I made my own, which was 1 3/4 cup flour
    1c of sugar
    1/2 tsp of baking powder

      I have always made this with a store bought Pillsbury cake mix. My guess is that your homemade version was not the same ratio as the box mix, which is why it was wetter than mine. I hope you end result tastes good.

    These sound amazing! I am needing to make a larger pan though. 9x13 to be exact. Would you suggest doubling the recipe for that size pan?

      Doubling it should work in a 9x13 pan and the bake time should be about the same, but I'm not quite sure since I haven't tested it this way. Or if you have two 8x8 pans, just double it that way. Keep me posted if you try it.
